Banana Bread
Banana bread maintains its moistness if stored at room temperature. Simply wrap your loaf in a plastic wrap and then slip it into a large heavy-duty plastic bag. This will keep the loaf moist and fresh for up to a week after baking. Banana bread also freezes perfectly for up to 2 months, when wrapped well with plastic wrap and then stored in double heavy-duty plastic bags. To thaw, remove from freezer and let it sit out at room temperature, in its original wrapping, overnight. In the morning, if you want to wake up that "fresh baked" flavor, put the loaf in a preheated 350degrees F oven for 10 minutes. Be careful not to dry it out.

Pound Cake
The key to maintaining the freshness of your pound cake is to keep it tightly wrapped and refrigerated, or in an airtight container. This will prevent drying. Your cake will last up to two weeks when wrapped and refrigerated. Wrapped and frozen, it can last up to six months.
